Watermelon-Mango Salsa | Cooking Light

Watermelon-Mango Salsa ingredients
Makes about 3 cups
2 cups (1/2-inch) cubed seeded watermelon
1 cup (1/2-inch) cubed peeled ripe mango
1/4 cup diced red onion
2 Tbsp chopped fresh cilantro
2 Tbsp diced seeded jalapeño pepper, about one small
1 Tbsp fresh lime juice
1/2 tsp sugar
1/4 tsp kosher salt

For serving
Grilled chicken or
Tortilla chips.

Watermelon-Mango Salsa Directions
Combine base
In a large bowl, combine the first five (5) ingredients (watermelon through jalapeño).

Prepare dressing
In a measuring glass or small bowl, whisk together the lime juice, sugar and kosher salt. Pour over the watermelon mixture and toss well to distribute.

Refrigerate before serving
Cover and refrigerate for one (1) hour or more to blend flavors.

Before serving, stir and then, adjust seasoning.

  • Serve as a condiment over grilled chicken or as a dip with tortilla chips.
