Texas Salsa | Gardeners' Community Cookbook




Texas Salsa ingredients
Makes about 3 cups
2 ripe mangoes, peeled and diced
10 - 12 large organic sweet strawberries, topped, hulled and sliced
6 ripe kiwis, peeled, quartered and sliced
3/4 cup blueberries
1 to 1.5 Tbsp sugar, to taste, and depending upon sweetness of the fruit
1/2 tsp grated fresh ginger
Splash of champagne

Garnish
8 fresh mint leaves


Texas Salsa Directions
In a large bowl, mix gently all ingredients except the mint.

Serve immediately or within one (1) hour, garnished with the mint leaves.


Texas Salsa Notes
  • According to Ms Wise, if champagne is not on the menu, substitute "not-too-dry" white wine such as a California Chablis, French Muscadet or German Riesling.

  • Serve with pancakes or French Toast, a simple grilled chicken breast, or over light sorbet.
