Heirloom Yellow Tomato Salsa

Heirloom Yellow Tomato Salsa ingredients (8)
Makes about one cup
1-lb. heirloom yellow tomatoes (about 4 - 5)
1 tsp. grated Vidalia Onion
1 tsp. finely-minced Serrano chile pepper (about 1/4 of one chile, seeds and membrane removed)
1 tsp. lime zest
2 tsp. fresh lime juice
1/4 tsp. granulated garlic powder
1 Tbsp. + 1 tsp. (= 4 tsp.) white wine vinegar

For serving
As a condiment, grilled or broiled chicken, or grilled fish
As a dip, Fritos® Lightly Salted Corn Chips, or small, baked chips like Simply Tostitos® Blue Corn Tortilla Chips (halved)

Heirloom Yellow Tomato Salsa directions
Seed the yellow tomatoes. Over a small bowl to capture the juices, dice the tomatoes and drop them into the bowl.

Add the remaining ingredients; toss to combine well.

Cover and refrigerate three (3) hours before serving as a condiment with grilled chicken or fish, or as a dip with chips.
