Firecracker Salsa ingredients (9)
Makes about 1.5 cups
1/2 cup dried tart cherries1/2 cup cherry, peach, or raspberry jam or preserves
2 Tbsp red wine vinegar
1/2 cup red onion, chopped
1/2 cup yellow bell pepper, chopped
1/2 fresh jalapeño pepper, seeded and chopped, more or less to taste
1 to 2 Tbsp fresh cilantro, chopped
Juice of one lime
For serving
Grilled swordfish or
Grilled tuna or
Grilled hamburgers
Firecracker Salsa Directions
Combine dried tart cherries, jam (or preserves) and vinegar in a small microwave-safe bowl; mix well.Microwave on High (100% power) until hot, about sixty to ninety (60 to 90) seconds. Let stand five (5) minutes.
Then, stir in remaining ingredients (red onion through lime juice).
Cover and refrigerate three to four (3 - 4 hours) or overnight.
Serve with grilled swordfish or tuna. Also excellent as a topping for hamburgers.
