Broccoli-Onion Deluxe Casserole | Cook & Love It!




Broccoli-Onion Deluxe Casserole ingredients (11)
Servings not stated
Vegetables
3 pkgs frozen broccoli
2 medium onions, chopped
Olive oil

Sauce
3 Tbsp butter
3 Tbsp flour
1/2 tsp salt
Dash of pepper
1.5 cups (12.0-oz / 355ml) milk
1 (8-oz / 227g) box cream cheese, softened 

Topping
1 cup grated sharp Cheddar cheese
Croutons or crushed crackers


Broccoli-Onion Deluxe Casserole directions
Preheat oven to 350ºF.

Prepare vegetables 
Cook broccoli until tender; drain and cut into 1-inch pieces. Set aside.

Heat olive oil and cook onions until tender; drain and set aside.


Prepare white sauce  
In a saucepan, melt the butter and then stir in the flour, salt and pepper to make a roux. Add milk, stirring constantly until thick. Then, reduce heat and add the cream cheese and stir until smooth. Remove from heat.


Assemble and bake casserole  
Lightly spray 2-quart casserole dish with PAM® No-Stick  Cooking Spray; add vegetables, pour over sauce and mix lightly. Sprinkle Cheddar cheese on top and cover tightly with foil. 

Bake in preheated 350ºF oven for thirty (30) minutes. 

Then, uncover; sprinkle croutons (or crushed crackers) around edge of casserole and then bake for five (5) minutes more.
