Fresh Tomato Pizza recipes

Cheesy Fresh
Tomato-Basil Pizza
Makes 8 servings (2 pieces each)
2 (11.5-inch) Mama Mary's Thin & Crispy Pizza Crusts
Panko bread crumbs
3 cups shredded Parmesan-Reggiano (divided use)
2 Roma tomatoes, cut horizontally into 8 to 10 slices
1/2 to 1 cup finely shredded Mozzarella

For serving:
20 to 30 fresh basil leaves

Variation(s):
Bloody Mary Pizzas:  Replace fresh tomatoes with roasted tomatoes (1/2 recipe), cut lengthwise and halved or in thirds for total of 20 to 30 pieces. To each pizza, add 1 1/2 cups grated Romano cheese and 1/2 to 1 cup finely shredded Mozzarella and the fresh basil.

Directions
Place each pizza crust on a 16-inch pizza pan or baking sheet sprinkled with panko crumbs. 

Drain tomato slices on paper towels. Preheat oven to 425°F. Leaving 1/2-inch border around edges, sprinkle dough with the Parmesan-Reggiano; arrange a single layer of tomato slices on top.

Sprinkle  Mozzarella evenly over tomatoes. Bake in preheated 425°F oven until cheeses are melted, about 10 minutes. Remove from oven and sprinkle with basil; cut each pizza into 8 wedges and serve.

Marion's Red, White & Blue Salad | Suncoast Seasons

Marion's Red, White & Blue Salad ingredients
Makes 16 servings
Layer 1 (red)
1 (3-oz) pkg raspberry Jell-O

Layer 2 (white)
1 cup coffee cream
1 (0.25-oz) pkg unflavored gelatin
1/4 cup water
1 cup sour cream
1/2 cup sugar
1 tsp vanilla extract

Layer 3 (blue)
1 (3-oz) pkg lemon or blackberry Jell-O
1 cup boiling water
1 (16-oz) can blueberries, undrained


Marion's Red, White & Blue Salad Directions
Prepare Layer 1 at least 8 hours before serving
Prepare Jell-O as directed on package; pour into a 13- x 9- x 2-inch glass pan or a large salad mold. Refrigerate until set.


Prepare Layer 2 
Heat coffee cream to boiling pint; remove from heat. Dissolve gelatin in water.

In a small bowl, beat sour cream until runny. Add sugar and vanilla; beat for 1 minute. Add gelatin and sour cream mixtures to coffee cream; pour over first layer (raspberry Jell-O). Refrigerate for 2 hours.


Prepare Layer 3
Mix Jell-O with boiling water; add blueberries and syrup from can. Pour mixture over second layer (coffee cream mixture). Refrigerate for four to six (4 to 6) hours.


Serve
Cut into squares (or unmold) before serving.

Strawberry-Banana Daiquiri Cake | Louisiana Cookin'

Just like a great frozen strawberry daiquiri, a banana is the secret ingredient for maximizing the flavor of this Strawberry-Banana Daiquiri Cake.




Strawberry-Banana Daiquiri Cake
Makes 8 to 10 servings
Cake
1 (18.25-oz) box Pillsbury Plus Strawberry Cake Mix
1 1/2 cups fresh or frozen Louisiana strawberries, thawed
1 ripe banana, mashed
2 eggs
2 Tbsp lime juice
1 Tbsp light rum

Lime and Rum Glaze
3/4 cup powdered sugar
1 Tbsp lime juice
1 Tbsp light rum

Garnish
Freshly-grated lime zest
Cleaned, fresh strawberries, whole or sliced into fans


Directions
Advance preparations  
Preheat oven to 350°F. Grease and flour a 12-cup Bundt pan; set aside.


Prepare cake
In a large bowl, combine all of the cake ingredients, stirring with a wooden spoon until moistened. Then, use hand mixer to beat for two (2) minutes at highest speed.

Pour the batter into the prepared pan. Bake until a toothpick inserted in the center of the cake comes out clean, about forty (40) minutes. Do not overbake.

Cool cake upright for twenty five (25) minutes. Loosen outer edges of cake with table knife before inverting onto serving plate.


Prepare Lime and Rum Glaze while cake is baking
In a small bowl, whisk together all of the Glaze ingredients until smooth. If you prefer a thinner glaze, add water, a few drops at a time until the consistency suits you. Spoon glaze evenly over cake and sprinkle with lime zest.


Serving
Add a fresh strawberry to each plate, as desired.

Fresh Strawberries with Brown Sugar




Strawberries with Brown Sugar
and Sour Cream
Makes 8 servings
2 pints fresh strawberries, rinsed, dried, hulls intact
1 firmly-packed cup dark brown sugar
1 pint sour cream

Variations:
Stir some cinnamon into the brown sugar.  


Notes:   




Directions
Place the berries in a large glass or crystal bowl. 

Put the sugar and sour cream in separate smaller glass or crystal bowls. Pass at the table for guests to serve themselves, dipping a berry first into the sour cream, and then into the brown sugar.

Cheese Grits | Suncoast Seasons

As First Spouse, Phyllis George (former Miss America of 1971, sportscaster and business woman) spearheaded the restoration of the Kentucky Governor's Mansion (shown below). This Cheese Grits recipe is Ms. George's favorite and it was served often at the Governor's Mansion (see Family Dining Room after the recipe).



Phyllis George's Cheese Grits ingredients (7)
Makes 6 servings
1 cup grits
4 cups boiling water
1/4-lb. butter or margarine
2 Tbsp Seasoning Salt
Garlic, to taste
12-oz Cheddar cheese, shredded
2 eggs, slightly beaten


Phyllis George's Cheese Grits Directions
Preheat oven to 325ºF. Grease 1.5-quart casserole and set aside.

Cook grits in boiling water until thick. Add butter, seasonings and cheese, stirring until melted.  Stir eggs into grits mixture. Pour into prepared greased 1.5-quart casserole and bake for 1 hour in preheated oven.

Watermelon Salad (recipes & links)

This post contains recipes using fresh watermelon and a soft cheese. It's best to prepare these salads just before serving.

Mediterranean Watermelon Salad ingredients
Makes 6 servings
Dressing
1 Tbsp 3 Tbsp extra-virgin olive oil
3 Tbsp fresh orange juice
Dash or more cracked black pepper, to taste

Salad
6 cups torn mixed salad greens
3 cups cubed seeded watermelon, drained well and well-chilled
1/4 to 1/2 cup red onion, cut into 1-inch matchsticks, about 1/4 to 1/2 half of small
1/3 cup 1/2-lb. feta cheese, crumbled


Variations
Add 1/3 cup pitted kalamata olives, some chopped fresh mint and dress salad with olive oil and red wine vinegar. Mark Bittman via NYT

Watermelon Salad via Umami Mart


Mediterranean Watermelon Salad Directions
Just before serving, and in a large bowl, whisk together the Dresiing ingredients. Add all Salad ingredients and toss lightly to coat.

Watermelon-Blue Cheese Salad with Roasted Pecans ingredients
Makes 6 to 8 servings
Dressing
2 cups inexpensive balsamic vinegar
1 cup sugar
1 sprig fresh rosemary

Salad
4-ozs fresh baby greens
2 oranges seedless, peeled and sectioned
4 cups seedless watermelon cubes, well-chilled
2 cups seedless red grapes, chilled and halved
2 cups fresh, trimmed and sliced strawberries
1 cup crumbled blue cheese
1/2 cup Roasted Pecans (recipe here), halved or chopped

Variations
Use 1/2 cup toasted, chopped hazelnuts rather than Roasted Pecans.

Watermelon-Mango Salad with Blue Cheese via Blue Kitchen


Watermelon-Blue Cheese Salad with Roasted Pecans Directions
Prepare Dressing
Heat the vinegar in a heavy non-corrosive saucepan over Medium heat and stir in sugar. Continue to stir and adjust heat to bring the mixture to a simmer. Add the rosemary sprig to the pan. Continue to simmer until the contents of the pan reduces by 1/2 its original volume. Set aside.


Assemble and serve salad
Divide the greens among six or eight (6 or 8) salad plates. Arrange fruits and berries on top of the greens and drizzle the Dressing over all. 

Sprinkle the cheese and Roasted Pecans on top and serve immediately.

Watermelon Feta Flag Salad
Makes 12 (3/4 cup) servings

Watermelon-Feta Salad ingredients
Makes 6 to 8 servings
Dressing
1 to Tbsp extra-virgin olive oil
1/4 cup fresh lime juice, about 2 medium limes
Freshly-ground black pepper to taste

Salad
6 cups seedless watermelon cubes, chilled well, about 5-lbs. with the rind
1 to 2 cups feta cheese (pick one not made with cow's milk), crumbled or cut into (1/2-inch) cubes
1/4 cup fresh mint chiffonade
1/4 cup red onion matchsticks (optional)


Variations
Use favorite brand or recipe Balsamic Vinaigrette instead of the olive oil and lime juice.

Watermelon-Feta Salad Directions
Advance preparations
(Unless grilling first) Cut watermelon into 3/4-inch thick slices and remove the rind. Then, cut into 3/4-inch cubes and drain the watermelon pieces in a colander. Place watermelon in a zip-loc storage bag and chill well.


Prepare Dressing
Just prior to serving, and in a measuring glass, whisk together the Dressing ingredients. 


Assemble and serve salad
Add the watermelon, feta cheese, and mint to a large bowl. Pour over the Dressing and toss gently to coat. Serve immediately.

Margherita Pizza recipes

This classic Neapolitan-style pizza is so simple; it depends on quality ingredients.
The secret to a great pizza Margherita is to use the best ingredients you can find—and to approach them with restraint. ~epicurious.com

Eat Yourself Skinny's
Margherita
1 tsp extra virgin olive oil
1 garlic clove, halved
4 plum tomatoes, thinly sliced
1 cup (4-oz) fat free mozzarella cheese, shredded
1 tsp balsamic vinegar
1/2 cup fresh basil, chopped
1/8 tsp salt
1/8 tsp black pepper

For variation(s):
Add grape tomato halves for Regina Margherita.

Notes: 

Directions
Brush your dough with about a 1/2 teaspoon of olive oil and rub your crust with the cut sides of the garlic. Arrange tomato slices over crust, leaving a 1/2-inch border and sprinkle mozzarella cheese evenly throughout.  

Bake at 500°F for 10 to 12 minutes or until crust is golden brown and cheese is bubbly.  

Sprinkle pizza evenly with chopped basil, salt and pepper and feel free to drizzle a bit of balsamic if desired.

1 1/4 cups (5-oz) thinly sliced fresh mozzarella cheese
1/3 cup small fresh basil leaves
