Cranberry Dessert

Cranberry Praline Pudding ingredients
Makes 6 to 8 servings
Baked pudding
1/2 cups fresh cranberries, cleaned and dried
1.0-oz (1/8 cup) Praline New Orleans Style Pecan Liqueur
1/2 cup dark brown sugar
1 cup pecans
2 eggs
1/2 cup sugar
2/3 cup all-purpose flour
1/4 tsp ground cinnamon
1/8 tsp salt
1/2 cup butter or margarine, melted

For serving
Vanilla ice cream
1.0-oz (1/8 cup) Praline New Orleans Style Pecan Liqueur

Getting started
Soak cranberries in 1/8 cup of the liqueur for thirty (30) minutes. Preheat oven to 350ºF.

Prepare pudding
Arrange cranberries evenly over the bottom of a buttered 1-quart baking dish; sprinkle with the brown sugar and pecans.

In a large mixing bowl, beat eggs and sugar until thick. Add flour, cinnamon, salt and butter; mix until smooth and pour over cranberries.

Bake in preheated oven until a wooden pick inserted near the center comes out clean, about forty-five (45) minutes. Cool for fifteen (15) minutes.

Serve warm with ice cream, drizzling with remaining liqueur.
