Impossible Pumpkin Pie

This pie recipe is tasty; it's also easy because there's no crust to roll-out.

Impossible Pumpkin Pie ingredients
Makes 6 servings
1 cup canned pumpkin (not pumpkin pie mix)
1/2 cup Original Bisquick® Baking Mix
1/2 cup sugar
1 cup evaporated milk
1 Tbsp butter, softened
1.5 to 2 tsp pumpkin pie spice
1 tsp vanilla
2 large eggs

Preheat oven to 350ºF and spray 9-inch pie plate. 

Blend all ingredients. Bake 35 to 40 minutes, or until knife inserted in center comes out clean. Refrigerate until chilled, a few hours. 

Serve with whipped cream.
