Makes 6 to 8 servings
1 slice Mar-Tenn Country Ham or Bryan Hickory Crest Ham1 large onion
4 cups cooked diced chicken
1 (28-oz) can tomatoes, undrained
1 small can tomato purée
1 large pkg frozen okra
1 Tbsp chopped parsley
1/2 tsp thyme
Several dashes of Cajun seasoning
1 pkg Bryan Cajun-flavored Smoked Sausage, sliced
1-quart Sweet Sue chicken broth
1/2 tsp filé powder (see Notes)
1/2-lb shrimp
Notes: If planning to freeze, do not add filé powder until ready to serve.
Directions
Trim and chop ham into bite-sized pieces; sauté lightly with chopped onion. Combine remaining ingredients, except shrimp, and cook for about 20 minutes.Add shrimp and cook for 5 to 10 minutes.
