Bryan's Quick Gumbo | Folks in the Kitchen

This Quick Gumbo recipe from George W. Bryan, Sr., founder and Chairman of Old Waverly Golf Club in West Point, MS (1999 host to the 54th U.S. Women’s Open Championship), is ready in 45 minutes or less.


Bryan's Quick Gumbo
Makes 6 to 8 servings
1 slice Mar-Tenn Country Ham or Bryan Hickory Crest Ham
1 large onion
4 cups cooked diced chicken
1 (28-oz) can tomatoes, undrained
1 small can tomato purée
1 large pkg frozen okra
1 Tbsp chopped parsley
1/2 tsp thyme
Several dashes of Cajun seasoning
1 pkg Bryan Cajun-flavored Smoked Sausage, sliced
1-quart Sweet Sue chicken broth
1/2 tsp filé powder (see Notes)
1/2-lb shrimp

Notes:  If planning to freeze, do not add filé powder until ready to serve.

Trim and chop ham into bite-sized pieces; sauté lightly with chopped onion. Combine remaining ingredients, except shrimp, and cook for about 20 minutes.

Add shrimp and cook for 5 to 10 minutes.
