Sausage Main Dishes

Sausage is a main ingredient in these casserole and main dish recipes.

Italian Sausage with Beans
(Salsiccie Con Fagioli)
Makes 4 to 6 servings
For cooking sausage:
8 Tennessee Pride Italian Sausage Links
2 Tbsp olive oil
1/2 cup dry white wine

For cooking beans:
1 cup chopped onion
1 cup chopped celery
3 Tbsp olive oil
1 tsp rosemary
2 bay leaves
2 cloves garlic, chopped
1 cup chopped, seeded tomatoes
1 can cannellini beans (aka white kidney beans), drained
Salt and pepper, to taste


Cook sausage: Sauté sausage links in the 2 Tbsp olive oil over Moderate heat, turning occasionally. When links are brown, add wine, Cover and lower heat; cook for about 5 minutes. Remove cover, increase heat and cook out wine. Set links aside, keeping warm. Reserve pan juices.

Preheat oven to 375ºF.

Prepare beans:  In an oven-proof casserole, sauté onion and celery in the 3 Tbsp olive oil. Simmer, covered, for about 10 minutes, or until onion wilts. Add herbs, tomatoes and beans; season with salt and pepper. Cook, covered, for 5 minutes.

Add sausage links and 3 Tbsp of its reserved pan juices; cover and bake for 20 to 30 minutes. Serve hot straight from the casserole.

Sausage and Chicken Casserole
Makes qty??
2 pkgs saffron rice
1-LB Tennessee Pride Country sausage
1 hen, cooked and diced
2 cans cream of mushroom soup
1/4 cup water or chicken broth
1 can mushrooms
1 cup cracker crumbs
2 Tbsp melted butter


Preheat oven to 350ºF.

Cook rice as directed; cook sausage and drain. Mix rice, sausage and diced hen; place in casserole.

Mix soup, liquid and mushrooms; pour over rice mixture. Cover with cracker crumbs and melted butter. Bake at 350ºF for 30 minutes. Serve hot.

Texas Style Tacos
Makes 6 to 8 servings??
1/2 cup chopped onion
1/2 cup chopped green pepper
1-LB ground beef
1/4 tsp oregano
2 tsp chili powder
1 large can stewed tomatoes
1/2 tsp garlic powder
1 tsp salt
Black pepper, to taste
2 pkgs taco shells
1 cup grated cheese
1 cup shredded lettuce


In large skillet over Medium heat, cook sausage until it loses its pink color; stir to break-up sausage. Sauté onions and peppers in sausage drippings; drain. 

Add ground beef and cook until lightly browned; stir in oregano and chili powder; reduce heat and simmer for 8 to 10 minutes.

Meanwhile, and in another large skillet, combine the tomatoes, garlic powder, salt and pepper and bring to a boil. Cook, uncovered, for about 5 minutes to reduce liquid content.

Assemble tacos: With a slotted spoon, place about 1/4 cup of meat mixture in each taco shell. Top with 2 or 3 Tbsp of tomato mixture. Add cheese and lettuce and serve immediately.
