Makes 6 servings
1 cup mushroom caps1/4 cup scallions, chopped
6 boned chicken breasts
1/4 cup margarine
1 Tbsp olive oil
1/4 cup Bourbon or more, to taste
1 cup heavy cream
Directions
SautéSauté mushrooms; set aside
In skillet, sauté onions in oil and margarine. Meanwhile, flour, salt and pepper chicken breasts.
Add chicken to skillet and brown lightly on each side. Remove chicken.
Prepare sauce
Add cream and Bourbon and stir until smooth. Place chicken in gravy and cover with sautéed mushrooms.
Bake and serve
Cover and place in a 325ºF oven. Cook until chicken has reached a safe internal temperature (currently, USDA Food Safety Inspection Service minimum is 165°F for poultry); use a thermometer to check temperatures.
Serve warm over rice.
