Sweet Herb Roasted Chicken ingredients
Makes 4 servings1 whole chicken
6 sprigs each of lemon balm, orange mint and pineapple sage (the small, new
leaves have the most pineapple flavor)1 large sweet onion, sliced
4 cloves garlic, coarsely chopped
Salt and pepper, to taste
Preheat oven to 350ºF. Wash the chicken, and pat it dry.
Coat a roasting pan with olive oil and line the bottom with half of the herbs, onion and garlic. Season the chicken with salt and pepper and stuff the cavity with the remaining aromatics, reserving a little of each to put between the skin and the breast.
Bake at 350ºF until juices run clear, about 1 hour. Cover lightly with foil and allow chicken to rest for 15 minutes before serving.
