Looking for Cherry Desserts

I'm looking for dessert recipes to adapt and showcase some of the infused cherries (both fresh and canned sour batches) made this summer. Do you have any suggestions?


Here's a few ideas for recipes that could be adapted:


Cherry Garcia Cookies

Notes: Adapt to use sour cherries in Luxardo syrup instead of reconstituted dried cherries?

Cherries Jubilee
Ice Cream Pie
Makes 8 servings
1/3 cup water
1/4 cup sugar
1 Tbsp cornstarch
2 Tbsp brandy
1 (12-oz) pkg frozen pitted dark sweet cherries
2 Tbsp butter, melted
2 Tbsp honey
1 1/2 cups graham cracker crumbs (about 9 cookie sheets)
4 cups vanilla low-fat ice cream, softened

Notes:  Use cherries in syrup rather than frozen cherries?

Directions
Preheat oven to 375°.

Prepare cherry mixture:  Combine first 5 ingredients in a medium saucepan. Bring to a boil; cook 2 minutes or until thick, stirring constantly. Cool completely.

Make crust:  Combine butter and honey in a medium bowl. Add graham cracker crumbs, stirring to blend. Press mixture into bottom and up sides of a 9-inch pie plate. Bake at 375° for 8 minutes. Cool completely.

Prepare sauce and filling:  Place 1/2 cup cooled cherry mixture in a food processor; process until smooth. Place the remaining cherry mixture in an airtight container; cover and chill.

Place softened ice cream in a large bowl, and beat with a mixer at Medium speed until smooth. Add puréed cherry mixture, and gently fold in to achieve a swirl pattern. Spoon mixture into the cooled crust. Cover and freeze 4 hours or until firm.

Just before serving, top with reserved cherry sauce.

Chocolate Kahlúa Brownies
with Whiskey Soaked Cherries
Makes qty??
1 1/2 cups sugar
3/4 cup butter
4 Tbsp water
4 cups chocolate chips (divided into 2- cup portions)
2 Tbsp Kahlúa
4 eggs
1 1/2 cups flour
1/2 tsp baking soda
1/2 tsp salt
12 to 24 whiskey soaked cherries, chopped

Notes: Adapt, including liqueur, for liquors used to infuse cherries (Brandy + cardamom, Jack Daniels+vanilla, Irish Whiskey, Luxardo+sour cherries).

Directions
Preheat the oven to 375ºF. Prepare a baking dish by greasing with butter (or Pam.)

In a large saucepan, melt the sugar, butter and water to just boiling. Remove from heat; add 2 cups of chocolate chips, stirring until melted. Pour in Kahlúa and then stir in one egg at a time.

Sift in the flour, baking soda and salt; stir to combine. Add the chopped cherries and remaining 2 cups of chocolate chips; stir to combine and pour into the baking pan.

Bake about 30 minutes, or until the middle just settles.

Sour Cream Cherry Cake

Notes:  Adapt to use chopped cherries in Luxardo cream cheese frosting instead of fresh cherries and whipped cream?
