Makes 1 (8- or 9-inch) loaf cake3/4 cup (6-oz) whole dates
1 cup cake flour
1 tsp baking powder
3/4 tsp cinnamon
1/2 tsp salt
Pinch of nutmeg
3/4 cup vegetable oil
1/2 cup brown sugar
1/4 cup honey
1 tsp vanilla
1/2 cup chopped walnuts
Nonstick cooking spray

Date Honey Nut Cake directionsPreheat oven to 325ºF. Place dates into a bowl and cover them with very hot water.
Meanwhile, make the batter. In a large mixing bowl, sift together the dry ingredients (cake flour through nutmeg).
In a medium mixing bowl, whisk together the wet ingredients (vegetable oil through vanilla); pour into the dry ingredient mixture. Stir until a thick batter forms.
Drain and pit the dates; then chop into small chunks and fold into the batter.
Generously apply cooking spray to a loaf pan; pour batter into prepared pan.
Bake cake in preheated oven until a toothpick inserted in the center comes out clean, about 1 hour. Remove from oven; cool on wire rack.
