Makes 4 servings4 medium salmon fillets
1 Vidalia onion
1 zucchini, grated
4 tsp olive oil
4 tsp white wine
Salt and pepper, to taste
DirectionsPreheat oven to 400ºF.
Place each fillet on a square of aluminum foil. Put 2 slices of ginger underneath each fillet. Top with onion and zucchini, dividing equally. Drizzle each with 1 tsp oil, 1 tsp wine and, a dash of lemon juice. Salt and pepper and seal foil packets. Bake at 400ºF for 25 minutes.
