Refritos Frijoles | Suncoast Seasons


Refritos Frijoles
(Refried Beans) ingredients
Makes 6 servings
1 (12-oz) pkg (dry) pinto beans
1 tsp salt
1/2 tsp hot pepper sauce (divided use)
3/4 cup milk, divided
1 cup shredded sharp cheddar cheese (divided use)
2 Tbsp oil

Getting started
The night before or several hours before serving, and in a large pan, soak beans in water flavored with the salt and 1/4 tsp of the hot pepper sauce.

Simmer for three hours
Bring the beans to a boil and simmer until soft, 2 to 3 hours. During cooking, add 1/4 cup of the milk and 1/2 cup of the cheese.

Mash and adjust seasoning
Drain beans, reserving liquid. In a large skillet over Medium heat, heat oil; add beans and cook for a few minutes. Gradually add reserved liquid, and mash, mash and mash. Add small amounts of  remaining milk (amount may vary depending on liquid left when cooking the beans), the remaining 1/4 tsp hot pepper sauce and 1/2 cup cheese while continuing to mash. Adjust flavoring to taste.

Serve with tortillas and fresh fruit.
