This sauce is good for Margherita Pizza, Pepperoni Deep-Dish Pizza and Grilled Vegetable Pizza.
Basic Pizza Sauce ingredients
Makes about 2 cups, or 6 (1/3 cup each) servings
2 Tbsp extra-virgin olive oil5 garlic cloves, minced
1 (28-oz) can San Marzano tomatoes
1/2 tsp kosher salt
1/2 tsp dried oregano leaves, crushed
Directions
Sauté garlicIn a medium saucepan over Medium setting, heat the oil. Add garlic and cook one (1) minute, stirring frequently.
Combine sauce ingredients
Use a slotted spoon to remove tomatoes from can; reserve juices and crush tomatoes.
Then, stir tomatoes, juices, salt, and oregano into garlic mixture and bring to a boil.
Simmer
Reduce heat, and simmer thirty (30) minutes, stirring occasionally.

New York-Style (red) Pizza Sauce ingredients
Makes 2 2/3 cups
7 Tbsp water ( I prefer using wine.)2 Tbsp chopped fresh basil
1.5 Tbsp extra-virgin olive oil
2 tsp dried oregano leaves, crushed
1.5 tsp sugar
1 tsp minced garlic (I increase.)
1 (14.5-oz) can petite-cut diced tomatoes, undrained
1 (6-oz) can tomato paste
Variations
For thicker sauce, reduce or omit the water.
Use garlic/basil flavored diced tomatoes.
Directions
