For salad:1-LB spiral macaroni, cooked and drained
3 medium tomatoes, diced
1-LB cheddar cheese, cubed
1 to 2 bunches green onions, sliced
3-oz sliced pepperoni
For dressing:
3/4 cup vegetable oil
2/3 cup grated Parmesan cheese
1/2 cup red wine vinegar
1 to 2 tsp dried crumbled oregano
1 tsp garlic powder
1 tsp salt
1/4 tsp pepper
For serving:
Croutons
Notes: Substitute olive oil and add or serve with pepperoncini?
Directions
Several hours before serving, and in a large bowl, combine all salad ingredients.In a small bowl, whisk together all dressing ingredients; pour over macaroni mixture and lightly toss to distribute the dressing. Cover and refrigerate for several hours.
Just before serving, top with croutons.
