Apple-Carrot Quick Bread | Suncoast Seasons

Apple-Carrot Bread ingredients
Makes 1 loaf
1-1/2 cups peeled and shredded apples
1/2 cup shredded carrots
1/4 cup margarine, softened
1/2 tsp lemon extract
2 eggs
1-3/4 cups all-purpose flour
2/3 cup sugar
1 tsp baking powder
1 tsp baking soda
1/2 tsp salt
1/2 cup chopped walnuts


Pre-heat oven to 375ºF. Well-grease (9- x 5- x 3-inch or 8- x 4- x 3-inch) loaf pan; set aside.

In a large bowl, blend first 5 ingredients (apples through eggs) together.

Except for walnuts, add remaining ingredients and beat by hand for 3 minutes. Blend in walnuts; pour into prepared loaf pan and bake in preheated 375ºF oven for 50 to 60 minutes, or until done.
