Watermelon Salad (recipes & links)

This post contains recipes using fresh watermelon and a soft cheese. It's best to prepare these salads just before serving.

Mediterranean Watermelon Salad ingredients
Makes 6 servings
1 Tbsp 3 Tbsp extra-virgin olive oil
3 Tbsp fresh orange juice
Dash or more cracked black pepper, to taste

6 cups torn mixed salad greens
3 cups cubed seeded watermelon, drained well and well-chilled
1/4 to 1/2 cup red onion, cut into 1-inch matchsticks, about 1/4 to 1/2 half of small
1/3 cup 1/2-lb. feta cheese, crumbled

Add 1/3 cup pitted kalamata olives, some chopped fresh mint and dress salad with olive oil and red wine vinegar. Mark Bittman via NYT

Watermelon Salad via Umami Mart

Mediterranean Watermelon Salad Directions
Just before serving, and in a large bowl, whisk together the Dresiing ingredients. Add all Salad ingredients and toss lightly to coat.

Watermelon-Blue Cheese Salad with Roasted Pecans ingredients
Makes 6 to 8 servings
2 cups inexpensive balsamic vinegar
1 cup sugar
1 sprig fresh rosemary

4-ozs fresh baby greens
2 oranges seedless, peeled and sectioned
4 cups seedless watermelon cubes, well-chilled
2 cups seedless red grapes, chilled and halved
2 cups fresh, trimmed and sliced strawberries
1 cup crumbled blue cheese
1/2 cup Roasted Pecans (recipe here), halved or chopped

Use 1/2 cup toasted, chopped hazelnuts rather than Roasted Pecans.

Prepare Dressing
Heat the vinegar in a heavy non-corrosive saucepan over Medium heat and stir in sugar. Continue to stir and adjust heat to bring the mixture to a simmer. Add the rosemary sprig to the pan. Continue to simmer until the contents of the pan reduces by 1/2 its original volume. Set aside.

Assemble and serve salad
Divide the greens among six or eight (6 or 8) salad plates. Arrange fruits and berries on top of the greens and drizzle the Dressing over all. 

Sprinkle the cheese and Roasted Pecans on top and serve immediately.

Watermelon Feta Flag Salad
Makes 12 (3/4 cup) servings

Watermelon-Feta Salad ingredients
Makes 6 to 8 servings
1 to Tbsp extra-virgin olive oil
1/4 cup fresh lime juice, about 2 medium limes
Freshly-ground black pepper to taste

6 cups seedless watermelon cubes, chilled well, about 5-lbs. with the rind
1 to 2 cups feta cheese (pick one not made with cow's milk), crumbled or cut into (1/2-inch) cubes
1/4 cup fresh mint chiffonade
1/4 cup red onion matchsticks (optional)

Use favorite brand or recipe Balsamic Vinaigrette instead of the olive oil and lime juice.

Watermelon-Feta Salad Directions
Advance preparations
(Unless grilling first) Cut watermelon into 3/4-inch thick slices and remove the rind. Then, cut into 3/4-inch cubes and drain the watermelon pieces in a colander. Place watermelon in a zip-loc storage bag and chill well.

Prepare Dressing
Just prior to serving, and in a measuring glass, whisk together the Dressing ingredients. 

Assemble and serve salad
Add the watermelon, feta cheese, and mint to a large bowl. Pour over the Dressing and toss gently to coat. Serve immediately.
