As First Spouse, Phyllis George (former Miss America of 1971, sportscaster and business woman) spearheaded the restoration of the Kentucky Governor's Mansion (shown below). This Cheese Grits recipe is Ms. George's favorite and it was served often at the Governor's Mansion (see Family Dining Room after the recipe).
Phyllis George's Cheese Grits ingredients (7)
Makes 6 servings1 cup grits
4 cups boiling water
1/4-lb. butter or margarine
2 Tbsp Seasoning Salt
Garlic, to taste
12-oz Cheddar cheese, shredded
2 eggs, slightly beaten
Phyllis George's Cheese Grits DirectionsPreheat oven to 325ºF. Grease 1.5-quart casserole and set aside.
Cook grits in boiling water until thick. Add butter, seasonings and cheese, stirring until melted. Stir eggs into grits mixture. Pour into prepared greased 1.5-quart casserole and bake for 1 hour in preheated oven.
