Rainbow Pudding Parfaits | Tablespoon

Rainbow Pudding Parfaits ingredients
Makes 4
For pudding:
1 (5.1-oz) box vanilla (or white chocolate) instant pudding, prepared as package directs
Red, yellow, green, blue, and purple liquid food coloring

For garnish:
Whipped topping
Rainbow sprinkles (optional)


Several hours before serving, separate the prepared pudding into 6 individual bowls.

Add 2 drops of food coloring to each bowl to make the rainbow colors. For orange, use one drop yellow and one drop red.

Arrange the bowls in the spectrum of the rainbow: red, orange, yellow, green, blue, purple.

Layer the pudding by adding 2 tablespoons of the first pudding color (either red or purple) into four small, thin parfait glasses (about 8-oz volume works well). Tap the bottom of your parfait glass gently on the counter after each layer to make the layer flatten.

Using the above photo as a guide, repeat process with each of the remaining pudding colors (ending in either purple or red).

Refrigerate the pudding as package directs, until fully set.

Immediately before serving, top with whipped cream and if desired, rainbow sprinkles.
