Luscious Lemon Ring ingredients
Makes 8 servingsFor souffle:
1 (3 3/4-oz) pkg vanilla instant pudding and pie filling
1 (8-oz) pkg Philadelphia Brand Cream Cheese, softened
1/2 cup sugar
2 Tbsp lemon juice
1 tsp grated lemon rind
1/2 cup heavy cream, whipped
Fresh mint sprigs
1 (1-LB) pkg frozen raspberries or strawberries, thawed
Substitute 1 cup frozen whipped topping for 1/2 cup heavy cream, whipped
DirectionsSeveral hours before serving, prepare mix as directed for pudding on package.
Combine softened cream cheese, sugar, lemon juice and rind; mix until well-blended.
Fold pudding and whipped cream into cream cheese mixture. Pour into 4 1/2-cup ring mold; freeze.
One hour before serving, place dessert in refrigerator.
Just before serving, unmold dessert onto serving plate. Garnish with mint and serve with raspberries or strawberries.
