Fire Roasted Tomato Bruschetta ingredients
Makes qty??1/4 cup plus 1 tsp olive oil (divided use)
1 garlic clove, finely diced
Salt and pepper, to taste
1 baguette, cut into 1/4-inch slices
1 (14.5-oz) can Diced Fire Roasted Salsa Style Tomatoes in Tomato Purée, drained
1 shallot, finely diced
Fresh basil leaves
DirectionsPlace oven rack in top position and set broiler to High.
Mix 1/4 cup olive oil with the garlic, salt and pepper; brush mixture on one side of sliced baguette and place oil side up under broiler until browned, about 2 minutes. Set aside.
In a separate bowl, mix the drained tomatoes, shallots and 1 tsp olive oil; spoon about 1 teaspoon onto browned side of baguette.
Stack and roll basil leaves and slice into thin strips; sprinkle over tomato-topped baguette and serve.
