Bailey's Irish Cream Brownies | Bake or Break

Bailey's Irish Cream Brownie ingredients
Makes about 48 bars
Chocolate batter:
1 cup butter
4 (1-oz) squares unsweetened chocolate
2 cups sugar
4 large eggs
1 1/2 cups all-purpose flour
1/2 tsp salt

2 (8-oz) packages cream cheese
1/3 cup sugar
1 large egg
3 Tbsp Bailey’s Irish Cream liqueur


Prepare the chocolate batter:   Preheat oven to 350ºF. Line a (9- x 13-inch) baking pan with aluminum foil and lightly coat with a non-stick cooking spray.  

Place butter and chocolate into a medium saucepan and melt over Low heat, stirring often. Remove from heat and let cool.

In a medium bowl, use an electric mixer to beat sugar and eggs together until light and fluffy, about 4 minutes. 

Sift together flour and salt; add gradually to wet ingredients. Fold in the melted chocolate mixture.

Prepare the filling: In another medium bowl, combine cream cheese and sugar; beat until creamy. Add egg and liqueur and beat.

Assemble: Pour half of the chocolate batter into the pan. Spread all of the the cream cheese filling over the chocolate layer. 

Pour the remaining chocolate batter over the cream cheese layer; use offset spatula to smooth the top of the batter. If desired, gently pull tip of a knife through batters, creating a marbling effect.

Bake for 40 minutes. Cool completely before cutting into bars.
