Asparagus Quiche

Asparagus Quiche ingredients
Makes 6 servings
1 (9-inch) pastry shell
8 slices bacon, cooked crisp
2 cups asparagus, cleaned and cut diagonally into 1-inch pieces
1 cup shredded Gruyère or Swiss cheese
1 cup half-and-half
3 eggs, slightly beaten
1 tsp dried tarragon or 1 Tbsp minced fresh tarragon
1/4 tsp nutmeg
1/2 tsp salt
Dash of pepper

Notes:  How about stir-frying asparagus in olive oil, roasting it (nutty sweet flavor) or grilling it (smoky flavor) -- too mushy in quiche? Dubliner cheese?

Prick pastry shell with fork and bake at 450ºF for 7 minutes; cool.

Reduce oven to 350ºF.

Crumble bacon in baked shell; add asparagus, then cheese.

Mix half-and-half, eggs and seasonings; pour gently over cheese. Bake at 350ºF until set and puffy, about thirty (30) minutes.
