Zucchini Bread | The Commercial Appeal


Zucchini Bread ingredients
Makes 1 loaf
3 eggs
1 cup oil
2 cups sugar
2 tsp vanilla
2 cups zucchini squash, grated
3 cups flour
2 tsp cinnamon
1 tsp salt
1/2 tsp baking powder
1 tsp soda
1 cup broken nuts (optional)
1 cup raisins or dates (optional)

Variations
Allspice instead of cinnamon

1 cup zucchini and 1 cup mashed banana instead of 2 cups zucchini


Directions
Preheat oven to 350ºF. Slightly grease and flour 9- x 5- x 3-inch loaf pan and set aside.

Mix eggs, oil, sugar and vanilla, beating to blend.

Sift dry ingredients together; add to first mixture and add squash. Add nuts and raisins; spoon into prepared loaf pan and bake at 350ºF for one hour.
