Carrot Bread | The Commercial Appeal


Carrot Bread ingredients
Makes 1 loaf
2/3 cup vegetable oil
1 cup sugar
2 eggs
2 1/2 cups all-purpose flour
1 tsp cinnamon
1 cup grated carrots


Directions
Preheat oven to 350ºF. Grease 9- x 5- x 3-inch loaf pan and set aside.

Cream oil and sugar. Mix egg in well.

Add flour and cinnamon and mix until smooth. Stir in carrots.

Turn batter into prepared loaf pan and bake in 350ºF oven for 55 minutes.

Serve warm with butter or cream cheese, or for better slicing,wrap in foil and refrigerate for about 12 hours.
