Salsa Bean Soup with Chicken ingredients
Makes qty??2 Tbsp olive oil
1 medium onion, diced
1-LB frozen fully cooked diced grilled chicken breast
3 (15-oz) cans great Northern beans with juice
1 (14.5-oz) can Diced Fire Roasted Salsa Style Tomatoes in Tomato Purée
Salt and pepper, to taste
Cumin or chili powder
DirectionsIn a 4-QT pot on Medium heat, add olive oil and onions; heat until onions are slightly tender.
To pot, add fully cooked frozen diced grilled chicken and combine with onions, heating until no longer frozen.
To pot, add great Northern beans and tomatoes, stirring to combine. Allow to heat over Medium-Low for about 15 minutes or until lightly bubbling, stirring occasionally. Add salt and pepper, to taste.
Serve warm, refrigerating any leftovers.
