P.F. Chang's Chicken Lettuce Wraps | Top Secret Recipes


P.F. Chang's Chicken Lettuce Wraps Copycat ingredients

Filling
8 dried shiitake mushrooms
1.5-lbs boneless, skinless chicken, cut into 1/2-inch bite size pieces and marinated using the recipe below
5 Tbsp canola oil (divided use for stir fry)
1 tsp fresh minced ginger
2 cloves garlic, minced
2 green onions, minced
2 small dried chilis, (optional)
1 (8-oz) can bamboo shoots, drained and minced
1 (8-oz) can water chestnuts, drained and minced
1 pkg cellophane Chinese rice noodles (shopping) prepared according to package instructions

Cooking Sauce
1 Tbsp Hoisin sauce
1 Tbsp soy sauce
1 Tbsp dry sherry
2 Tbsp oyster sauce
2 Tbsp water
1 tsp sesame oil
1 tsp sugar
2 tsp cornstarch

Marinade for chicken
1 tsp cornstarch
2 tsp dry sherry
2 tsp water
Kosher salt to taste
Freshly-ground pepper to taste
1 tsp oil

For serving
Crisp, whole iceberg lettuce leaves, cleaned well for rolling



Directions
Reconstitute mushrooms
Cover dried shiitake mushrooms with boiling water; let stand 30 minutes then drain. Cut and discard woody stems. Mince and set aside.


Prepare Cooking Sauce
Meanwhile, mix all Cooking Sauce ingredients in bowl; set aside.


Marinate chicken
In medium bowl, combine cornstarch, sherry, water, soy sauce, salt, pepper and chicken. Stir to coat chicken thoroughly; then, stir in 1 tsp. oil. Cover bowl with plastic wrap and set aside for fifteen (15) minutes.


Stir-fry
Heat wok (or large skillet) over Medium High heat. Add 3 Tbsp of the oil, then the chicken; stir-fry for about three to four (3−4) minutes and set aside.

Add remaining 2 Tbsp oil, ginger, garlic, onion and chilies (if using) to wok; stir-fry about one (1) minute.

Then, add mushrooms, bamboo shoots and water chestnuts; stir-fry an additional two (2) minutes.


Finish and serve
Return chicken to wok. Add the prepared Cooking Sauce and cook until thickened and hot.

Break cooked cellophane noodles into small pieces and place them on the serving dish, spreading around to cover it. Pour chicken stir-fry mixture over noodles. Spoon into lettuce leaf and roll.
