Makes 4 servings2 cups cooked rice
2 cups (8-oz) shredded Monterey Jack cheese
1-1/2 cups cooked, chopped chicken breast meat
1 (12-oz) can Carnation® Evaporated Milk
1/2 cup finely chopped red onion
2 large eggs, lightly beaten
1/4 cup finely chopped cilantro
2 Tbsp butter or margarine, melted
1 Tbsp diced jalapeñoes
DirectionsPreheat oven to 350ºF. Lightly grease 2-QT casserole dish.
Combine all ingredients; stir well and spoon into prepared casserole dish.
Bake for 45 to 50 minutes, or until knife inserted in center comes out clean. Season with salt, to taste.
