Chef Dale's Bean Gumbo | Louisiana Cookin'


Chef Dale's Bean Gumbo ingredients
Makes 20 servings
2-LBS dried red kidney beans
1-LB dried baby lima beans
1-LB Great Northern beans
2-LBS smoked sausage, sliced
2-LBS pickled pork or ham, cubed
6 medium yellow onions, chopped
2 bunches green onions, chopped
2 large green bell peppers, chopped
2 cloves garlic, chopped
Cajun seasoning, to taste
Lemon pepper, to taste
Garlic powder, to taste
Onion powder, to taste
White pepper, to taste
Hot Sauce, to taste

For serving:
Hot cooked rice

Notes:

Directions
Place beans in a large stock pot, cover with water and place over High heat. Add sausage, pork and vegetables. Season to taste. Bring water to boil, then reduce to Medium heat and cook until beans are soft and creamy, 2 to 3 hours.

Serve over hot rice.
