Broccoli Chicken & Rice (Crock-Pot Test)

I'm determined to cook rice in the crock-pot, and am happy this rice is not mushy!

Crock-pot Broccoli Chicken & Rice ingredients
Canola cooking spray
1 Italian sweet red onion, sliced
Lemon-pepper
granulated garlic
dried dill weed
1-1/4 cups uncooked converted rice
3 frozen chicken breasts
1-1/2 cups hot water
1-1/2 tsp McCormick Chicken Base
1 pkg (16-oz) frozen broccoli florets
Reconstituted lemon juice


Notes: Next time, I will try doubling the rice. Also, I'll cook the chicken less, or add some sauce on top.

Directions
Spray inside of crockpot. Place onion slices on bottom and sprinkle with seasonings. Add layer of rice, and place frozen chicken on top.

Dissolve Chicken Base in hot water, and pour over chicken and rice. Cover and cook on Low for 6 to 8 hours. For better color and texture, add the broccoli and sprinkle with lemon juice during the last 30 to 60 minutes of cooking.
