Potatoes Foster

Potatoes Foster ingredients
Makes 6 servings
2.5-LBS potatoes,  peeled
2 medium onions, chopped
6 Tbsp butter
3 cups shredded cheddar cheese
2 cups sour cream
Salt and pepper, to taste
Few dashes of Tabasco® Pepper Sauce or Worcestershire Sauce®, if desired


Preheat oven to 350ºF. Grease baking dish and set aside.

In a saucepan, combine the potatoes with enough water to cover; bring to a boil.

Boil potatoes until tender, about 45 minutes; drain. Shred potatoes and set aside.

In a skillet, sauté onions in the butter until tender, about 3 minutes. Stir the cheese and sour cream into the sauté pan. Cook until the cheese thoroughly melts, stirring constantly.

Add the potatoes, tossing to mix. Spoon into the greased baking pan. Bake casserole until the top is crusty and brown, about 45 to 60 minutes. Remove from oven; cover and allow to stand for 5 minutes.

Serve warm.
