Loaded Potato Soup | Slow-Cooker Quick Fixes

Loaded Potato Soup ingredients
Makes 8 servings
4-LB new potatoes, peeled and cut into 1/4-inch thick slices
1 small onion, chopped
2 (14-oz) cans chicken broth
2 tsp salt
1/2 tsp pepper
2 cups half-and-half

For toppings:
Shredded Cheddar cheese
Cooked and crumbled bacon
Sliced green onions


Active Time: 15 minutes
Total Time: 8 HRS 35 minutes
Layer sliced potatoes in lightly greased 5-QT slow cooker. Top with chopped onion.

Stir together chicken broth, salt and pepper; pour over potates and onion. (Broth will not completely cover potatoes and onion.)

Cover and cook on Low for 8 hours, or until potatoes are tender.

Mash mixture with a potato masher; stir in half-and-half.

Cover and cook on High for 20 more minutes or until mixture is thoroughly heated.

Ladle into bowls, and serve with desired toppings.
