Cajun Dirty Rice | Slow-Cooker Quick Fixes

There's a lot of liquid in this recipe to start with, but the tomatoes and vegetables produce just enough to steam the rice. ~Editors, Southern Living Magazine 

Slow-Cooked Cajun Dirty Rice ingredients
Makes 8 servings
1 LB lean ground beef
1 LB ground pork sausage
2 tsp Cajun seasoning
2 (8-oz) pkgs refrigerated prechopped celery, onion, and bell pepper
2 cups uncooked converted long-grain rice
1/4 tsp ground red pepper
1 (10-oz) can Ro-Tel diced tomatoes with green chiles, undrained
1 cup chicken broth


Active Time: 10 minutes
Total Time: 2 hours 10 minutes
In a large skillet, brown ground beef, sausage and Cajun seasoning over Medium-High heat, stirring often, for 8 minutes or until meat crumbles and is no longer pink. Use a slotted spoon to transfer meat mixture to a 5-QT slow cooker.

Stir in celery mix and remaining ingredients. Cover and cook on Low for 2 hours,  or until liquid is absorbed and rice is tender.
