Garlic Creamed Spinach

Garlic Creamed Spinach ingredients
1.5-LBS fresh spinach or 2 (10-oz) boxes of frozen chopped spinach
1 Tbsp olive oil
1 Tbsp butter
1 large onion
4 cloves garlic
2 Tbsp flour
3/4 cup half-and-half or sour cream
1/4 tsp ground nutmeg
1 cup grated Parmesan cheese
Salt and pepper, to taste

Combine oil and butter in a wide frying pan over Medium heat.

Add onion and garlic, stirring until soft. Stir in flour, blending well. Remove from heat.

Blend in half-and-half or sour cream. Add nutmeg and spinach, and return to High heat. Stir vigorously until bubbling; remove from heat.

Mix in 1/2 cup of the Parmesan, and the salt and pepper.

Serve hot, sprinkled with the remaining 1/2 cup Parmesan.
