Hot Onion Soufflé | Heart and Soul

This hot appetizer is popular among our dinner groups. 

Hot Onion Soufflé ingredients
Makes about 6 cups
12 to 16-oz frozen chopped onions (3 to 4 cups)
24-oz cream cheese, softened
2 cups grated Parmesan cheese
1/2 cup mayonnaise

For serving
Corn chips or assorted crackers

Notes:  I like to serve Hot Onion Soufflé with Frito’s® Corn Chips, Red Oval Farms Stoned Wheat Thins and thinly-sliced Granny Smith or Golden Delicious apples. When serving larger groups, plan to serve two, even if you have other appetizers. Many times I've seen folks jockeying for the best grazing position when this dish comes out of the oven.

Thaw onions. Roll then in paper towels, squeezing to remove excess moisture.

Preheat oven to 425ºF.

Stir together onions, cream cheese, Parmesan, and mayonnaise until well-combined.

Transfer to a shallow 2-quart souffle dish (Corning-ware pie dish works great). Bake until golden brown, about fifteen (15) minutes.

Serve warm with corn chips or assorted crackers.

Connie's Twinkie Cake

Perfect for a hot summer day. When Connie makes this at the lake, it's always the adults clamoring for seconds. This Twinkie Cake is very refreshing and easy to prepare.

Connie's Twinkie Cake ingredients
Makes about 12 to 18 servings
1 (10-count) box Hostess® Twinkies, sliced lengthwise (you may have one extra)
1 large can crushed pineapple, drained but not squeezed dry
1 large box instant French Vanilla pudding, prepared according to directions on box, and chilled
2 to 3 bananas, sliced
1 (12-oz) container Kraft® Cool Whip® Whipped Topping

Whole maraschino cherries, chopped
Chopped pecans

Connie's Twinkie Cake Directions
Get ready
Assemble ingredients and equipment. As appropriate, rearrange refrigerator contents to make space for (13- x 9- x 2-inch) pan. 

Assemble layers
Several hours before serving, place Twinkies filling-side up in the bottom of  a (13- x 9-inch) pan. 

Pour over the pineapple, spreading to the edge of pan and covering the Twinkies.

Then, spread prepared pudding over the pineapple, and cover with sliced bananas. Frost with Cool Whip®.

Refrigerate before serving
Before serving, refrigerate Twinkie Cake until ice cold.

Garnish and serve
Cut into squares and garnish each with chopped pecans and a cherry, as individuals prefer.

Cover and keep refrigerated.

Connie's Twinkie Cake Notes
  • Connie uses whole Twinkies and chopped cherries; however, I prefer making this dessert as shown above. 

  • In my opinion, substituting Sugar-Free, Fat Free or Low Fat pudding mix, milk and whipped topping will not detract from the overall excellent taste of this dessert.

California Caviar | Folks in the Kitchen


California Caviar ingredients (7)
Servings not stated
1 (4-oz) can green chilies, chopped and about 1 Tbsp of the brine
1 (3.25-oz) can black olives, sliced and drained
4 green onions, chopped
1 tomato, chopped
1 (4-oz) pkg crumbled tomato basil feta cheese
1/2 cup Italian salad dressing

For serving
Corn chips

California Caviar Directions
Several hours before serving, combine all ingredients and refrigerate. Bring to room temperature and serve with corn chips.

Zesty Ripe Olive Dip | In The Nick of Time

Zesty Ripe Olive Dip
Makes 2 2/3 cups
1 (10-oz) can Ro-Tel, well-drained
2 (4-oz each) can chopped green chilies, well-drained
2 (4.25-oz each) can chopped black olives, well-drained
1 Tbsp red wine vinegar
2 tsp olive oil
1/2 tsp ground black pepper
1/4 tsp salt
1/4 tsp garlic powder

For serving
Tortilla chips

In a medium covered bowl, combine all of the dip ingredients. Let stand at room temperature for one (1) hour before serving with tortilla chips.
