Diane's Cold Broccoli Salad

Marla gave this recipe to Diane.

Diane's Cold Broccoli Salad ingredients (7)
Makes 8 servings
Dressing
1/2 cup mayonnaise 
1/4 cup sugar
2 Tbsp vinegar

Salad
2 large bunches of fresh broccoli (= 5 cups of florets and peeled stems from salad bar) 
5 green onions including tops, sliced
1/2 cup dark raisins
1-lb smoked bacon, cooked and crumbled

Variations
Substitute up to 1/2 cup chopped red onion for the green onions.

Add 1/2 cup chopped pecans (try these) or sunflower kernels.

Add another 1/2 cup dark raisins.


Diane's Cold Broccoli Salad Directions
Prepare dressing
In a small bowl, make dressing by combining mayonnaise, sugar, vinegar (and lemon juice, if desired). Mix well.


Prepare salad and refrigerate
Remove broccoli florets, peel broccoli stems, and place all in large bowl.

Add green onions and raisins (and pecans, if desired). Stir gently to mix.

Add dressing to the broccoli mixture. Toss and refrigerate for several hours.


Serve cold
Just before serving, add the crumbled bacon and toss. Serve cold.

  • Try light mayo or plain Greek yogurt in the dressing.
