Garlic-Basil White Wine Vinegar

This herbal vinegar is good with fresh, hot green beans.


Garlic-Basil Vinegar ingredients
Makes 2 cups
1/2 cup fresh basil
1 clove garlic, crushed
2 cups white wine vinegar (5% acidity)

For garnish:Additional sprigs of fresh basil

Notes:

Directions
Slightly bruise basil, and place in a large wide-mouth jar with garlic.

Place vinegar in a medium saucepan; bring to a boil. Pour vinegar over ingredients in jar; cover with lid. Let stand at room temperature for 2 weeks.

Strain vinegar through double-layer of cheesecloth into decorative jars, discarding basil and garlic residue. 

Add fresh sprigs of basil. Seal jars with a cork or airtight lid.
