Mom's Cranberry Relish ingredients
Makes about 6 servings1 box cherry-flavored Jell-O (see Notes)
1 cup hot water
1 (#2 can) crushed pineapple, drained and liquid reserved
1 orange, ground (see Notes)
1 cup ground raw cranberries (see Notes:)
1 cup chopped celery
1/2 cup freshly chopped nuts
1 cup sugar
1 Tbsp fresh lemon juice
Notes: I think Mom used 3-oz Jell-O™. Wash the orange and fresh cranberries, and grind them in a meat grinder using a fine blade until they are finely chopped.
I use Wild Strawberry or Raspberry Jell-O™ and add 1/2 cup more pecans. For extra flair, make in individual fluted molds, or spoon into scalloped, hollowed-out oranges.
DirectionsDissolve Jell-O™ in the hot water. Add reserved pineapple juice. Chill until consistency of an egg white.
Meanwhile, mix fruits, celery, nuts, sugar and lemon juice. Add to Jell-O™ and chill until firm.
